Hi Mark and r.e.blake, Thanks for your interest in my blog and your kind comments - especially with regard to the photos since, as those who know me best will tell you, it is usually a hit or miss situation when I pull out my camera. I'm really beginning to develop a healthy appreciation for food photographers and stylists!Although, looking back, it seemed impossible to go wrong the day I took these shots at Borough Market. The energy and activity of the place really helped in capturing these images - now if I can only figure out how to enlarge the pix when I format them in Picasa!
Many aspects of my method are based on my feeling and experience. For instance, I always give my bird a generous butter massage before I put it in the oven. Why? Because I think the chicken likes it—and, more important, I like to give it.
